Light Dinner

After working all day and needing to grocery shop, a light dinner that did not involve a lot of preparation was in order. So many choices now that our fridge is full, so little energy. 

The solution: put together a bunch of random and easy things. 

The result: tomato basil soup, fried plantains, and sliced avocado. 


Dinner was easy, quick, healthy, and delicious!
