Sweet Potatoes

I have been accustomed to eating sweet potatoes most often like baked potatoes. My husband likes them fried. 

I cube them while a pot of vegetable oil for nearly 20 minutes. Dusted with a bit of salt and drained of the oil it was soaking and voilà! Done to perfection!

This method has now become commonplace in our home.
