Due to couponing, I tend to have large amounts of items. One item in particular are the Old El Paso Tortilla Bowls (see more here).
We have used them for salad bowls and open faced burrito bowls. The bowls can be served soft or crispy. I put them in the oven to crisp them up a bit.
One night, I whipped up a mixture of items and put them into the bowls.
Here is what I mixed:
- Chayote
- Cucumber
- Tomato
- Green onion
- Cilantro
- Lime juice
- Cocina Latina beans
- Taco sauce found in the box of tortilla bowls
- Pan seared tilapia
A simple and fast dinner to put together with plenty of zest!
