I stumbled upon a recipe for a tomato-basil-feta pie. It is every bit as delicious as it sounds.
I modified the recipe a bit. I used slices of fresh mozzarella on each slice of tomato instead of shredded mozzarella. I eliminated the mayonnaise topping and topped off the pie with fresh mozzarella and feta.
This was so good that I was craving the leftovers at work the next day hoping no one would get to it before dinner. Fortunately, it was still there and we had it again for dinner the second night.
